Operation Fill the Freezer Complete (Almost)

Well, folks, tomorrow is the big day. By 9am we hope to have our little Vivian in our arms! Yay! So completely ready!

My mom came up a few days early to help me prepare some meals for the week following our homecoming. We've had a BUSY couple of days and now we're almost done. I think Mom may finish up for me while I'm in the hospital. She's the best! I got these recipes from a book called, tasteofhome freezer pleasers Cookbook. (Yes, the lowercase and running of words together is actually on the cover.) Great book with great pictures and EASY recipes.

First we cooked a ton of chicken. To be exact, twelve pounds of chicken breasts plus a whole chicken for broth making purposes. Here's a small sample when we got started.

Colorful Chicken Casserole. YUM. Trust me, we had some for lunch. Recipe here.

Moms Homemade Chicken Dressing: YUM. Trust me, I've eaten a lot of this stuff AND had some at lunch with our Colorful Chicken Casserole. No picture of this either and you aren't getting the recipe because Mom's instructions were to "add a few finger fulls of this" and "I'll know how much cornmeal when I see it in the bowl." So, that's not that helpful. :-) Think Thanksgiving Day and you'll understand its goodness.

Mom's also gonna make some breakfast burritos while I'm bed ridden. Can't wait to try those!

Finally, after all that cooking and with the expectation of more cooking we had to make a Walmart run. So, I decided to make a stop at the local Pretty Nails where I got my toes did. My feet were killing me and were quite ignored for 9 months so I decided a pre-hospital stay pedicure was in order. Fantastic idea!!!
